Recipes for My Top 5

If your anything like me, it usually takes least three tries to get a meal right and I do not enjoy cleaning up the mess of cooking.
So in saying that, here are some wonderfully easy meal ideas.

Eggs Benedict with asparagus
So so easy and so so yummy!
Asparagus with hollandaise sauce is amazing! Josh didn't really care for asparagus until he ate it with the hollandaise. I also love eggs Benedict with honey whole wheat english muffins.
English muffin- toasted
1-2 slices Canadian bacon or ham-heated
Eggs- poached
Hollandaise seasoning package. (48-98cents)

Creamy Chicken Enchiladas
My cousin Molly let me in on the secret of chicken enchiladas... they are fast and easy to make, who would have thought.
I make these about once a week. (I use corn tortillas)
Pre-heat oven to 350
COMBINE IN FRYING PAN: 1 tbsp butter,
1/2 onion, chopped
and 1/2 can green chili's
COMBINE:
1 pkg. cream cheese
cooked, chopped chicken breast or tenderloin
onion, chili mixture
1 tbsp milk.
IN SEPARATE BOWL COMBINE:
1 can cream a chicken soup
1 cup milk
remaining chili's

Roll cream cheese mixture into tortillas and place in backing pan.
Pour soup mixture over tortillas
place in oven for 20 minutes
remove from oven and add cheese. (I add a lot)
return to oven until cheese is melted.
Done 


Chicken BBQ Pizza
Again, fast and easy.
Jiffy pizza crust, 48cents at Winco
 (add more water than calls for, I use a square sheet because I don't own a round one.)
Baby Rays BBQ sauce
Grilled chicken
  Chopped onions, fine or thick
Cheese, as much as desired
Slice fresh tomato's on top, I like to add them after the pizza is cooked

Hamburger and Rice
I kinda consider this a "poor mans meal". However, this is very very tasty. Believe it or not but it has brown sugar in it as well.
 This is very delicious when served with corn as a side.


Nacho Chicken Casserole
This is by far the easiest. Chicken, sour cream, salsa, corn chips, and cheese.
All I can say is try it! You will eat it often.
I do not have exact measurements
Preheat oven to 350
Place chicken on cookie sheet, cut slices in the chicken, do not cut all the way through
Add sour cream, I put enough to cover the entire chicken breast
Add salsa, (enough to cover most of the sour cream)
Place in oven until chicken is done
Remove pan and add crushed chips and cheese, as much as desired
(for thicker pieces of chicken breast, be generous when adding the toppings)
Remove from oven when cheese is done.

Wow I haven't looked at your blog in a while. I'm glad I did your have been posting! You look really pretty in all the pics that your are in! Your apartment looks really cute. I'm glad you found one! :) Tell Josh happy birthday! All of these entree's look delicious! Can you do a post of their recipe's? I LOVE Hollidaise sauce. I call it Holiday sauce. I usually have it with brocilli, I'll have to try it with your recipe! Oh and your wipes case is so dang cute! You should do a post on how to make those as well! Or start selling them cause they are DANG CUTE! Cmon share your creativity!
